Pinot Nero Euda

Colour ruby red with violet hues.

Nose the wine features intense, distinctive hints of violet, ripe berries, cassis, and red currants, followed by lighter notes of white pepper, vanilla, coffee and bitter cocoa.

Taste: fresh-tasting, with velvety and silky tannins well integrated into an elegant and delicate body; harmonious and long lasting.

VINIFICATION

After arriving in the winery, the grapes are destemmed, pressed and cooled.

Fermentation: An initial on-skin cold pre-fermentation maceration is followed by alcoholic fermentation in steel. Before the end of the alcoholic fermentation, the Pinot Noir is racked into French oak barriques where fermentation is concluded.

 

Ageing: a period of ageing follows lasting at least 10-12 months in French oak barriques with frequent bâtonnage. After bottling, further bottle ageing is conducted.

 

FOOD PAIRINGS

Pairs perfectly with semi-mature cheeses, cold cuts such as raw ham and speck, tagliatelle with game or truffle ragù, lamb chops or grilled fish.
